For the Chicken:

  • 2 small boneless, skinless chicken breasts (or 4 chicken tenders)
  • 1/2 cup pickle juice (for marinating)
  • 1/2 cup buttermilk
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 egg
  • 1/4 cup milk
  • 1/2 cup panko breadcrumbs (for extra crunch)
  • Oil for frying (or air fryer option)

For the Burrito:

  • 4 large flour tortillas
  • 4 eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon butter
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup frozen hash browns (or Chick-fil-A-style potato tots, cooked)

For the Sauce (Optional):

  • 1/4 cup Chick-fil-A sauce (or spicy salsa)

Instructions

Prepare the Chicken:

  1. Marinate chicken in pickle juice and buttermilk for at least 30 minutes (or overnight for extra flavor).
  2. In a bowl, mix flour, salt, pepper, garlic powder, paprika, and cayenne.
  3. In another bowl, whisk egg and milk.
  4. Remove chicken from the marinade, dip into the flour mixture, then the egg mixture, and coat with panko breadcrumbs for a crispy finish.
  5. Fry: Heat oil to 350°F (175°C) and fry chicken until golden brown and cooked through (about 3-4 minutes per side). Alternatively, air fry at 375°F (190°C) for 12-15 minutes, flipping halfway.
  6. Let chicken rest for 5 minutes, then slice into strips.

Cook the Eggs & Hash Browns:

  1. In a bowl, whisk eggs, milk, salt, and black pepper.
  2. Melt butter in a skillet over medium heat and scramble the eggs until fluffy. Set aside.
  3. Cook frozen hash browns or potato tots according to package instructions.

Assemble the Burrito:

  1. Warm tortillas in a dry pan for 30 seconds on each side.
  2. Layer scrambled eggs, crispy chicken, hash browns, and shredded cheese in the center of each tortilla.
  3. Drizzle with Chick-fil-A sauce or salsa (if using).
  4. Fold the sides in and roll tightly into a burrito.

Serve & Enjoy:

  1. Optionally, toast the burrito in a skillet for 1-2 minutes per side for a golden, crispy finish.
  2. Slice in half and serve with extra sauce on the side!

  • Want it faster? Use pre-cooked frozen chicken tenders instead of homemade.
  • Healthier option: Air fry or bake the chicken and use whole wheat tortillas.
