  • 2 boneless, skinless chicken breasts
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup panko breadcrumbs
  • 1 egg, beaten
  • Vegetable oil, for frying
  • 4 slices of cheddar cheese
  • 2 large sandwich buns, toasted
  • 2 tablespoons mayonnaise
  • 2 tablespoons ketchup
  • 1 teaspoon Dijon mustard
  • 2 leaves of Romaine lettuce
  • 2 tomato slices
  • Pickles, for garnish

Instructions

  • In a shallow bowl, marinate the chicken breasts in buttermilk for at least 30 minutes to tenderize and flavor.
  • In another bowl, mix the flour, paprika, garlic powder, onion powder, salt, and pepper.
  • Dredge the marinated chicken breasts in the seasoned flour, then dip them in the beaten egg, followed by a coating of panko breadcrumbs.
  • Heat vegetable oil in a skillet over medium-high heat. Fry the chicken breasts for about 4-5 minutes on each side, or until golden brown and cooked through.
  • During the last minute of cooking, place a slice of cheese on each chicken breast to melt.
  • In a small bowl, mix together the mayonnaise, ketchup, and Dijon mustard to create the sauce.
  • Spread the sauce on the bottom half of each toasted sandwich bun.
  • Layer the crispy chicken breast on the bottom bun, followed by a slice of tomato, a leaf of lettuce, and pickles.
  • Top with the other half of the bun and serve immediately.

Notes

  • For a spicy twist, add a few slices of jalapeños or use spicy mustard in the sauce.
  • You can substitute the chicken breast with chicken thighs for extra juiciness and flavor.
