Brownie-Cookie

  • Total Time: 50 minutes
  • Yield: 1 9x13-inch pan of Brownie-Cookies 1x

Description

The Brownie-Cookie, also known as a Brookie, combines two of the most beloved desserts: fudgy brownies and chewy chocolate chip cookies! This indulgent treat layers rich brownie batter with classic cookie dough for the ultimate dessert mashup. Perfect for parties, potlucks, or when you can’t choose between a brownie or a cookie, this recipe gives you the best of both worlds in every bite!

Ingredients

Scale

For the Brownie Layer:

  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ⅓ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ¼ teaspoon salt

For the Cookie Layer:

  • ½ cup unsalted butter, softened
  • ½ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

Step 1: Preheat Oven

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.

Step 2: Make the Brownie Batter

  1. In a medium bowl, whisk together the melted butter and granulated sugar until smooth.
  2. Add the eggs and vanilla extract, whisking until combined.
  3. Stir in the cocoa powder, flour, and salt until a smooth brownie batter forms. Set aside.

Step 3: Make the Cookie Dough

  1. In a large bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy.
  2. Mix in the egg and vanilla extract until fully combined.
  3. Gradually add the flour, baking soda, and salt, mixing until just incorporated.
  4. Fold in the chocolate chips.

Step 4: Assemble the Brookie

  1. Pour the brownie batter into the prepared baking dish, spreading it evenly.
  2. Drop small spoonfuls of cookie dough over the brownie layer, leaving some gaps for the brownie to peek through. Gently press the dough into the batter with your fingers or a spatula.

Step 5: Bake

  1. Bake in the preheated oven for 25–30 minutes, or until a toothpick inserted in the center comes out with only a few moist crumbs (avoid overbaking to keep the brookie soft and fudgy).

Step 6: Cool and Serve

  1. Let the Brookie cool completely in the pan before cutting into squares or bars. Serve as-is, or with a scoop of vanilla ice cream for an extra indulgent treat.
