Instructions
- In a large bowl, combine the drained and flaked salmon with the egg, grated Parmesan cheese, Dijon mustard, almond flour, chopped onion, parsley, garlic powder, and lemon juice (if using).
- Season with salt and pepper to taste, then mix until all ingredients are well combined.
- Using your hands, form the mixture into small patties, about 2-3 inches wide. You should get about 6-8 patties depending on the size.
- Heat olive oil in a skillet over medium heat. Once hot, add the salmon patties to the pan, cooking for about 3-4 minutes on each side, until golden brown and crispy.
- Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
- Serve hot with a squeeze of lemon or your favorite dipping sauce.
