  • 1 large egg
  • 1/4 cup grated Parmesan cheese (for binding and flavor)
  • 1 tablespoon Dijon mustard
  • 1/2 cup almond flour (or oat flour as a substitute)
  • 1/4 cup finely chopped onion
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (for frying)
  • 1 tablespoon lemon juice (optional, for extra zest)

Instructions

  • In a large bowl, combine the drained and flaked salmon with the egg, grated Parmesan cheese, Dijon mustard, almond flour, chopped onion, parsley, garlic powder, and lemon juice (if using).
  • Season with salt and pepper to taste, then mix until all ingredients are well combined.
  • Using your hands, form the mixture into small patties, about 2-3 inches wide. You should get about 6-8 patties depending on the size.
  • Heat olive oil in a skillet over medium heat. Once hot, add the salmon patties to the pan, cooking for about 3-4 minutes on each side, until golden brown and crispy.
  • Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
  • Serve hot with a squeeze of lemon or your favorite dipping sauce.

Notes

  • Substitutes for Almond Flour: You can use oat flour, chickpea flour, or coconut flour instead of almond flour if you prefer. These flours work well to help bind the patties without breadcrumbs.
