Pistachio Syrup:

  • 1/2 cup unsalted pistachios, shelled
  • 1/2 cup water
  • 1/4 cup brown sugar or honey
  • 1/2 tsp vanilla extract
  • Pinch of salt

Latte:

  • 1 shot espresso (or 1/2 cup strong brewed coffee)
  • 1 cup milk (dairy or non-dairy like oat, almond, or coconut milk)
  • 2 tbsp homemade pistachio syrup (adjust to taste)
  • 1/2 tbsp butter (for brown butter topping, optional)
  • 1/2 tsp brown sugar (for topping, optional)
  • Crushed pistachios for garnish (optional)

Instructions

  • Make the Pistachio Syrup:

    • Blend pistachios and water until smooth.
    • Strain the mixture using a fine mesh sieve or nut milk bag.
    • In a small saucepan over medium heat, combine the pistachio liquid, brown sugar, vanilla extract, and salt. Stir until sugar dissolves.
    • Simmer for 5 minutes, then remove from heat and let cool.
  • Brew the Coffee:

    • Prepare 1 shot of espresso or 1/2 cup strong brewed coffee.
  • Steam & Froth the Milk:

    • Heat the milk in a saucepan or steam using a frother until hot and frothy.
  • Assemble the Latte:

    • Add 2 tbsp of pistachio syrup to a mug.
    • Pour in the espresso and mix.
    • Add steamed milk and stir.
  • Make the Brown Butter Topping (Optional):

    • In a small pan, melt butter over low heat until it turns golden brown and has a nutty aroma. Stir in brown sugar until dissolved.
  • Garnish & Serve:

    • Drizzle the brown butter mixture on top.
    • Sprinkle with crushed pistachios.
