For the Turkey Drumsticks:

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt

  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground mustard
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1/4 cup apple cider vinegar or lemon juice (for marinating)

Instructions

  • Prepare the Marinade: In a small bowl, mix olive oil, paprika, garlic powder, onion powder, salt, pepper, thyme, mustard, and cayenne pepper (if using).
  • Marinate the Drumsticks: Rub the spice mixture evenly over the turkey drumsticks. Place the drumsticks in a resealable plastic bag or dish, and pour the apple cider vinegar or lemon juice over them. Seal and refrigerate for 2-4 hours, or overnight for more flavor.
  • Prepare the Smoker: Preheat your smoker to 225°F (107°C). If using a charcoal grill, set it up for indirect heat and add wood chips to the charcoal for smoke.
  • Smoke the Drumsticks: Place the marinated drumsticks on the smoker grate. Close the smoker lid and cook for 2 ½ to 3 hours, or until the internal temperature of the turkey reaches 165°F (74°C). Ensure the smoker maintains a consistent temperature throughout the cooking process.
  • Optional Crisping: For a crispy skin, you can increase the temperature to 375°F (190°C) for the last 15-20 minutes of smoking, or finish them on a grill for a few minutes.
  • Rest & Serve: Remove the drumsticks from the smoker and let them rest for 5-10 minutes before serving. This allows the juices to redistribute, making the meat more tender.
