- 1/2 lb (225g) ground beef, chicken, or tofu (your choice)
- 1 tablespoon olive oil
- 1/2 onion, chopped
- 1 garlic clove, minced
- 1 tablespoon taco seasoning
- 1/2 cup cooked rice (white or brown)
- 1/2 cup canned black beans, drained and rinsed
- 1/4 cup corn kernels (fresh or frozen)
- 1/4 cup shredded cheese (cheddar, Monterey Jack, or vegan cheese)
- 1/4 cup sour cream or Greek yogurt
- 1/4 cup salsa or pico de gallo
- 1/4 cup fresh cilantro, chopped (optional)
- 1 lime, cut into wedges
Instructions
- Cook the Protein: Heat the olive oil in a skillet over medium heat. Add the onion and garlic, and sauté until softened (about 3-4 minutes). Add the ground meat or tofu, breaking it up as it cooks. Stir in taco seasoning and cook until the meat is fully browned or the tofu is crispy. Set aside.
- Prepare the Rice & Beans: In a separate pan, warm the cooked rice and black beans over low heat. If using, also warm the corn.
- Assemble the Burrito: Lay the flour tortillas flat on a clean surface. In the center of each tortilla, add a few spoonfuls of rice, beans, and your choice of protein.
- Add Toppings: Top the rice and protein with cheese, sour cream, salsa, and cilantro (if using).
- Fold the Burrito: Fold in the sides of the tortilla and roll it up tightly to form a burrito.
- Serve: Cut the burrito in half and serve with lime wedges for squeezing over the top. Enjoy!
