Ingredients
Scale
For the Peach Filling:
- 5 cups fresh or canned peaches (sliced, drained if canned)
- ½ cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon lemon juice
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
For the Topping:
- 1 cup all-purpose flour
- ½ cup granulated sugar
- 1 tablespoon baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter, cold and cubed
- ½ cup milk (whole or buttermilk preferred)
Instructions
Step 1: Preheat Oven
- Preheat the oven to 375°F (190°C). Grease a 9×9-inch baking dish or a similar-sized dish.
Step 2: Prepare the Peach Filling
- In a large bowl, toss the sliced peaches with sugar, cornstarch, lemon juice, cinnamon, and nutmeg until the peaches are evenly coated.
- Pour the peach mixture into the prepared baking dish, spreading it out evenly.
Step 3: Make the Biscuit Topping
- In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut the cold, cubed butter into the dry ingredients using a pastry cutter or your hands until the mixture resembles coarse crumbs.
- Stir in the milk, mixing just until the dough comes together (don’t overmix).
Step 4: Add the Topping
- Drop spoonfuls of the biscuit dough over the peach filling, covering as much of the surface as possible. The dough doesn’t need to completely cover the peaches—leave some gaps for the cobbler to bubble up.
Step 5: Bake
- Bake for 40–45 minutes or until the peach filling is bubbly and the topping is golden brown. If the topping starts to brown too quickly, cover loosely with foil and continue baking until fully cooked through.
Step 6: Cool and Serve
- Let the peach cobbler cool slightly before serving. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat.
Notes
- Storage: Store any leftovers in an airtight container at room temperature for up to 2 days or in the fridge for up to 4 days.
- Freezing: The cobbler can be frozen before baking (assemble it and freeze). When ready to bake, let it thaw slightly and bake as usual.
- Customizations: Add a sprinkle of brown sugar or sliced almonds to the topping for extra texture and flavor.
- Gluten-Free Option: Use a gluten-free flour blend for the topping, ensuring that the other ingredients are gluten-free as well.
