- 1/4 cup (30g) finely chopped onion
- 1/4 cup (30g) finely chopped green bell pepper (optional)
- 1 large egg, lightly beaten
- 1/2 cup (60g) breadcrumbs (plus extra for coating, if desired)
- 2 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 1/4 tsp garlic powder
- 1/4 tsp paprika
- 1/4 tsp salt (adjust to taste)
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped (optional)
- 2–3 tbsp vegetable oil (for frying)

Instructions
Prepare the Salmon Mixture:
- In a large bowl, combine the drained salmon, chopped onion, bell pepper (if using), egg, breadcrumbs, mayonnaise, Dijon mustard, garlic powder, paprika, salt, and pepper. Mix until well combined.
Form the Patties:
- Divide the mixture into 6-8 equal portions and shape into patties about 1/2 inch thick. If the mixture is too wet, add more breadcrumbs, 1 tablespoon at a time.
Coat the Patties (Optional):
- For extra crispiness, lightly coat the patties with additional breadcrumbs.
Cook the Patties:
- Heat vegetable oil in a large skillet over medium heat. Add the patties in a single layer, making sure not to overcrowd the pan.
- Cook for 3-4 minutes per side, or until golden brown and crispy. Remove from the skillet and place on a plate lined with paper towels to drain excess oil.
Serve:
- Serve the salmon patties warm with lemon wedges, tartar sauce, or your favorite dipping sauce.
Notes
- For a lighter version, bake the patties at 375°F (190°C) on a greased baking sheet for 20 minutes, flipping halfway through.
- These patties can be made ahead of time. Prepare the mixture, shape into patties, and refrigerate for up to 1 day before cooking.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months. Reheat in a skillet or oven.
