  • Yield: Approximately 40 mini pancakes 1x

Description

These Mini Pancakes are the perfect bite-sized breakfast treat! Light, fluffy, and irresistibly cute, they’re great for kids, brunch gatherings, or even as a fun dessert. Serve them with maple syrup, fresh fruit, or powdered sugar for a delightful experience. Quick and easy to make, this recipe is bound to become a family favorite!

Ingredients

Scale

For the Pancakes:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • ¾ cup milk (or buttermilk for extra fluffiness)
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter (plus more for greasing the pan)

Optional Toppings:

  • Maple syrup
  • Fresh berries
  • Powdered sugar
  • Whipped cream
  • Chocolate chips

Instructions

Step 1: Prepare the Batter

  1. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk the egg, milk, vanilla extract, and melted butter until well combined.
  3. Pour the wet ingredients into the dry ingredients and gently whisk until just combined. Avoid overmixing; it’s okay if there are a few lumps.

Step 2: Preheat the Pan

  1. Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with butter or a bit of oil.

Step 3: Cook the Mini Pancakes

  1. Use a tablespoon or a small squeeze bottle to drop small dollops of batter onto the skillet (about 1-inch circles).
  2. Cook for 1–2 minutes, or until bubbles form on the surface and the edges look set. Flip the pancakes and cook for another 1–2 minutes until golden brown.
  3. Transfer the pancakes to a plate and keep warm. Repeat with the remaining batter.

Step 4: Serve

  1. Arrange the mini pancakes on a platter or in small stacks. Top with your favorite toppings like maple syrup, fresh fruit, or powdered sugar. Serve immediately and enjoy!

Notes

  • For evenly round mini pancakes, use a squeeze bottle for precise portioning.
  • These pancakes freeze beautifully! Let them cool completely, then store in an airtight container or freezer bag for up to 2 months. Reheat in the microwave or toaster.
  • To make chocolate chip pancakes, sprinkle a few mini chocolate chips onto the batter right after pouring it onto the skillet.
