- Soak the Fries: Submerge the sliced potatoes in a bowl of ice water for 30 minutes. This step removes excess starch, helping the fries become extra crispy.
- Dry and Coat: Drain the potatoes and pat them completely dry with a clean towel. In a large bowl, mix cornstarch, paprika, garlic powder, onion powder, salt, and pepper. Toss the fries in the mixture until evenly coated.
- Heat the Oil: In a deep skillet or fryer, heat vegetable oil to 350°F (175°C). Use a thermometer to maintain consistent oil temperature.
- First Fry: Fry the potatoes in small batches for 3–4 minutes, just until they start to turn pale golden. Remove and place them on a wire rack or paper towel. Let them rest for 5–7 minutes.
- Second Fry: Increase the oil temperature to 375°F (190°C). Fry the potatoes again for 2–3 minutes until they’re golden brown and crispy.
