- 1 lb (450g) ground beef or Italian sausage
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- 1 can (28 oz) crushed tomatoes
- 1 can (14 oz) diced tomatoes
- 4 cups beef broth (or chicken broth)
- 8 lasagna noodles, broken into pieces
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh basil, chopped (optional)
Instructions
- Cook the meat: In a large pot, heat olive oil over medium heat. Add ground beef (or sausage) and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
- Sauté aromatics: Add diced onion and garlic to the pot and sauté until softened, about 2-3 minutes. Stir in salt, black pepper, oregano, basil, and red pepper flakes.
- Add tomatoes & broth: Pour in crushed tomatoes, diced tomatoes, and beef broth. Stir well to combine.
- Simmer the soup: Bring to a boil, then reduce heat and let it simmer for about 10 minutes.
- Cook the noodles: Add the broken lasagna noodles directly into the pot. Simmer for another 10 minutes, stirring occasionally, until the noodles are tender.
- Add cheese: Stir in ricotta, mozzarella, and Parmesan cheese until melted and creamy.
- Serve: Garnish with fresh basil, extra Parmesan, or a dollop of ricotta cheese. Enjoy hot!
