These small circular pancakes, also known as mini pancakes or silver dollar pancakes, are fluffy, bite-sized, and perfect for breakfast, brunch, or a fun snack! They’re light, golden, and can be topped with syrup, fruit, or even turned into pancake cereal. Quick and easy to make, these little pancakes will be a hit with kids and adults alike!

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup milk (or buttermilk)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter or oil
  • Butter or oil for cooking

Instructions

  • Mix Dry Ingredients: In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • Combine Wet Ingredients: In a separate bowl, whisk together milk, egg, vanilla extract, and melted butter.
  • Make the Batter: Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.
  • Heat the Pan: Lightly grease a non-stick pan or griddle over medium-low heat.
  • Cook Mini Pancakes: Drop small spoonfuls (about 1 tablespoon each) of batter onto the pan. Cook for about 1-2 minutes until bubbles form on the surface, then flip and cook for another 30-60 seconds until golden brown.
  • Serve: Stack and serve with maple syrup, fresh berries, powdered sugar, or your favorite toppings.

  • For pancake cereal: Make tiny dime-sized pancakes and serve in a bowl with syrup or milk.
  • Want fluffier pancakes? Use buttermilk instead of regular milk for extra softness.
