  • 1/4 cup unsalted pistachios, shelled
  • 1 cup milk (dairy or non-dairy, such as almond, oat, or coconut milk)
  • 1/2 cup water
  • 1 tbsp honey or maple syrup (adjust to taste)
  • 1/2 tsp vanilla extract
  • 1/4 tsp cinnamon (optional)
  • 1 shot espresso or 1/2 cup strong brewed coffee
  • Crushed pistachios for garnish (optional)

Instructions

  • Make the Pistachio Milk: Blend the pistachios, water, and honey/maple syrup in a high-speed blender until smooth. Strain the mixture using a fine mesh sieve or nut milk bag to remove any solids.
  • Heat the Milk: In a small saucepan over medium heat, warm the pistachio milk and your choice of regular milk. Stir in vanilla extract and cinnamon, if using. Heat until hot but not boiling.
  • Brew the Coffee: Prepare a shot of espresso or brew strong coffee.
  • Froth the Milk: Use a frother or whisk to create a light foam in the heated pistachio milk mixture.
  • Assemble the Latte: Pour the brewed coffee into a cup and add the pistachio milk mixture. Stir to combine.
  • Garnish & Serve: Top with crushed pistachios for extra flavor and texture. Enjoy hot or pour over ice for a refreshing iced pistachio latte!

  • For an extra creamy texture, use oat or coconut milk.
  • Adjust the sweetness by adding more or less honey/maple syrup.
