  • 2 whole branzino, cleaned and gutted
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano or thyme
  • 1 lemon, sliced
  • 1/4 cup fresh parsley, chopped
  • 2 sprigs fresh rosemary (optional)
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon capers (optional)

Instructions

  • Preheat the oven to 400°F (200°C) or heat a grill to medium-high.
  • Prepare the branzino: Pat the fish dry with a paper towel. Make 2-3 shallow cuts on each side of the fish to help it cook evenly.
  • Season: Rub the fish inside and out with olive oil, minced garlic, salt, black pepper, and oregano.
  • Stuff the fish: Fill the cavity of each fish with lemon slices, fresh parsley, and rosemary (if using).
  • Bake or Grill:
    • Oven Method: Place the fish on a baking sheet lined with parchment paper and roast for 15-20 minutes, or until the skin is crispy and the flesh flakes easily.
    • Grill Method: Place the fish on a well-oiled grill and cook for about 5-7 minutes per side, until grill marks appear and the flesh is tender.
  • Garnish & Serve: Squeeze fresh lemon over the branzino, and sprinkle with extra parsley and red pepper flakes. Serve with roasted vegetables, a fresh salad, or a side of couscous.

Notes

  • For extra crispiness, broil the fish for the last 2 minutes of baking.
  • You can substitute branzino with snapper, sea bass, or trout for similar results.
  • Add capers, olives, or cherry tomatoes to the baking sheet for extra Mediterranean flavor.
