Description

The Fat Darrell Sandwich is the ultimate indulgent comfort food! Packed with crispy chicken tenders, mozzarella sticks, French fries, and smothered in marinara sauce, this legendary sandwich is a feast in itself. Born on a college campus, this over-the-top sandwich is perfect for game days, late-night cravings, or when you’re just in the mood for a fun, cheat-day treat.

Ingredients

Scale

For the Sandwich:

  • 2 large sub rolls or hoagie rolls
  • 68 crispy chicken tenders (homemade or store-bought)
  • 68 mozzarella sticks (homemade or frozen, prepared)
  • 1 cup French fries (prepared according to package directions)
  • ½ cup marinara sauce (warm)
  • ½ cup shredded mozzarella cheese (optional, for extra cheesiness)

Optional Toppings:

  • Ranch dressing or garlic aioli
  • Diced jalapeños (for a spicy kick)
  • Chopped parsley (for garnish)

Instructions

Step 1: Prepare the Ingredients

  1. Cook the chicken tenders, mozzarella sticks, and French fries according to package directions or your preferred method. Make sure everything is hot and crispy before assembling.
  2. Warm the marinara sauce in a small saucepan or microwave.

Step 2: Assemble the Sandwich

  1. Slice the sub rolls lengthwise but don’t cut all the way through, leaving the halves connected for easy stuffing.
  2. Line the bottom of each roll with 3–4 crispy chicken tenders.
  3. Add 3–4 mozzarella sticks on top of the chicken.
  4. Layer on a generous portion of French fries.
  5. Spoon warm marinara sauce over the fries, letting it drizzle through the layers.
  6. For extra cheesiness, sprinkle shredded mozzarella on top of the marinara sauce.

Step 3: Melt and Serve

  1. Place the assembled sandwiches on a baking sheet and broil on high for 1–2 minutes, just until the cheese melts (if using). Keep a close eye to avoid burning.
  2. Serve immediately, garnished with chopped parsley or your favorite toppings.

Notes

  • Swap the marinara sauce with ranch dressing or garlic aioli for a different flavor profile.
  • Add other fried favorites like onion rings or jalapeño poppers for an even more indulgent version.
  • This sandwich is best enjoyed fresh, but leftovers can be reheated in the oven to retain crispiness.
