Perfect for gifting, celebrations, or a little self-pampering, this recipe brings the essence of Dubai right to your kitchen.

Ingredients

Scale

Chocolate Base:

  • 1 1/2 cups (260g) dark chocolate chips or chopped dark chocolate
  • 2 tbsp (30g) unsalted butter
  • 1/4 cup (60ml) heavy cream

Mix-Ins and Toppings:

  • 1/4 cup (40g) chopped Medjool dates
  • 1/4 cup (30g) chopped pistachios
  • 1 tbsp (15ml) rose water
  • 1 tbsp (10g) crushed dried rose petals (optional)
  • 1 tbsp (15g) golden raisins or sultanas
  • 2 tbsp (20g) slivered almonds
  • Flaky sea salt for garnish

Instructions

  • Prepare the Chocolate Base:
    • In a heatproof bowl, melt the dark chocolate, butter, and heavy cream using a double boiler or microwave in 20-second intervals, stirring until smooth.
  • Add Flavors:
    • Stir in the rose water to infuse the chocolate with a delicate floral aroma.
    • Fold in the chopped dates, golden raisins, and half of the pistachios and almonds.
  • Assemble:
    • Line an 8×8-inch (20x20cm) square pan with parchment paper, leaving overhang for easy removal.
    • Pour the chocolate mixture into the pan and spread it evenly with a spatula.
  • Add Toppings:
    • Sprinkle the remaining pistachios, almonds, dried rose petals, and a pinch of flaky sea salt over the top. Gently press the toppings into the chocolate to secure them.
  • Set the Chocolate Bar:
    • Refrigerate the pan for 2-3 hours, or until the chocolate is completely set.
  • Slice and Serve:
    • Remove the chocolate bar from the pan using the parchment paper overhang. Use a sharp knife to cut it into squares or bars. Enjoy immediately or store for later!

Notes

  • Use high-quality dark chocolate (70% cacao or higher) for the best flavor.
  • For a nut-free version, omit the almonds and pistachios and add dried cranberries or shredded coconut.
  • Store the bars in an airtight container in the fridge for up to 2 weeks.
  • These make perfect edible gifts when wrapped in decorative boxes or cellophane bags.
