Ingredients
Scale
For the Brownie Layer:
- 1 box brownie mix (plus ingredients called for on the box, such as eggs, oil, and water)
For the Cookie Layer:
- 1 batch pre-made cookie dough (store-bought or homemade)
- If homemade:
- 1 ¼ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- If homemade:
Instructions
Step 1: Preheat Oven
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
Step 2: Prepare the Brownie Batter
- In a large bowl, prepare the brownie mix according to the package instructions. Set aside.
Step 3: Prepare the Cookie Dough (if homemade)
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a separate bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, and mix until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the chocolate chips.
Step 4: Assemble the Brookies
- Pour the brownie batter into the prepared baking dish, spreading it evenly.
- Drop small spoonfuls of cookie dough on top of the brownie batter. Use your fingers or a spatula to gently press the dough into the brownie batter.
Step 5: Bake
- Bake in the preheated oven for 30–35 minutes, or until a toothpick inserted into the center comes out mostly clean (a few crumbs are fine for a gooey texture).
Step 6: Cool and Serve
- Let the brookies cool completely in the pan before cutting into squares. Serve as-is, or with a scoop of vanilla ice cream for an indulgent treat.
