  • 6 large eggs
  • ¼ cup milk (optional, for fluffier eggs)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon butter or olive oil
  • 4 breakfast sausages (or 4 slices of bacon, diced)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
  • 1 cup diced vegetables (bell peppers, onions, tomatoes, or spinach)
  • 1 cup cooked hash browns or diced potatoes (optional)

For the Burritos:

  • 4 large flour tortillas (burrito-sized)
  • Salsa or hot sauce (optional)
  • Sour cream or Greek yogurt (optional, for serving)

Instructions

Prepare the Filling:

  1. Cook the Sausage:
    In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Remove from the skillet, crumble, and set aside.

  2. Sauté the Vegetables:
    In the same skillet, sauté the diced vegetables until tender, about 3–5 minutes. Remove and set aside.

  3. Scramble the Eggs:
    In a medium bowl, whisk together the eggs, milk, salt, and black pepper. Heat butter or oil in the skillet over medium-low heat. Pour in the egg mixture and cook, stirring gently, until the eggs are just set and fluffy.

  4. Combine Ingredients:
    Mix the scrambled eggs, cooked sausage, sautéed vegetables, and hash browns (if using) together in the skillet.

Assemble the Burritos:

  1. Warm the Tortillas:
    Heat the tortillas in the microwave or in a dry skillet for a few seconds to make them pliable.

  2. Fill the Tortillas:
    Place a generous scoop of the egg mixture in the center of each tortilla. Sprinkle with shredded cheese, and add salsa or hot sauce if desired.

  3. Fold the Burritos:
    Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom.
