Ingredients

Scale

For the Brownie Dough:

  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • ¼ teaspoon salt

For the Cookie Dough:

  • ½ cup unsalted butter, softened
  • ½ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

Step 1: Preheat Oven

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.

Step 2: Prepare the Brownie Dough

  1. In a medium bowl, whisk together the melted butter and sugar until smooth.
  2. Add the eggs and vanilla extract, and whisk until combined.
  3. Stir in the cocoa powder, flour, and salt until a thick brownie dough forms. Set aside.

Step 3: Prepare the Cookie Dough

  1. In a large bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2 minutes.
  2. Add the egg and vanilla extract, and mix until combined.
  3. Gradually mix in the flour, baking soda, and salt. Fold in the chocolate chips.

Step 4: Assemble the Brookie Cookies

  1. Scoop 1 tablespoon of brownie dough and 1 tablespoon of cookie dough. Gently press the two doughs together and roll into a ball.
  2. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.

Step 5: Bake

  1. Bake in the preheated oven for 10–12 minutes, or until the edges are set and the centers look slightly underbaked (they will continue to cook as they cool).

Step 6: Cool and Serve

  1. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.

Notes

  • Customizations: Add white chocolate chips, nuts, or caramel bits for extra flavor.
  • Storage: Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
  • Gooey Tip: For extra gooey centers, slightly underbake the cookies and enjoy warm!
